It's so easy to say belly made into bacon, but I really can't get enough of it ever. Since most people would say that I'll also throw out that I've had brain a couple of times and it's wonderful. Does whipped lard count as a part?

Yes I think lardo counts. I love that all the various parts I've tried have been tasty. It speaks to the Head to Tail utilization I'm happy some chefs are championing. I can't wait to try the Momofuku Pork Butt. smilies/tongue.gif

But I'd have to say that tripe is among the top, as well as cheeks and ears, especially in the Filipino dish, Sizzling Sisig (boiled, chopped, mixed with onion and vinegar, and served on hot plates). Oh, craving now . . . !

I would probably have to choose the skin. I love a crispy, flavorful pig skin. But you really can't go wrong with most any part of the pig. What makes a significant difference though is the chef. If he is truly skilled, he can transform any part of the pig into a treasure.

That is a hard one. Definitely the belly. I had pig tail at Craigie on Main the other day and that is another new favorite. Pork rinds or 'chicharones' are a must. Actually, any form of pig that has crunchy deep fried skin part attached to it is a true delight. I could go on and on about my favorite parts, but I will leave it at this. HHH
