Okay - I just wanted an excuse to show off some pictures I'm proud of. Here's a piquillo pepper inspired lunch. Stay tuned for next installment which will include another recipe or two from the Veggie Queen, Jill Nussinow. Thanks also to Top Chef Stephanie Izzard who suggested goat cheese and grilling. Tuna is next up. And of course the originally planned corn, black bean salad or sauté. Interesting we seem to be on a theme here, because I just got the latest email from Viviane Bauquet Farre. She's in Rockland Magazine this month with ..Tapas Time. Recipes for three tapas here, Piquillo Peppers and Garlic Thyme Olives.

Jacqueline - BEAUTIFUL picture!!! I love the combination. A very traditional dish within the Spanish, Portuguese & Basque food community is, the piquillo stuffed w/salt cod - not veggie but darn good!

I have a jar of the peppers sitting in my pantry as I type. Thanks for giving me a new idea for what to use them with.
